Lemon chicken lasagna

Based on recipe brought to potluck

Prep time: 30 minutes
Cook time: 40 minutes
Servings: 6 to 8

Ingredients

  • 3 chicken breasts, shredded
  • olive oil
  • 2 16 oz jars of roasted garlic Alfredo sauce
  • 2 Tbsp capers, drained
  • 9 non-boil lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups mozzarella cheese
  • ½ cup Parmesan cheese
  • 1 ½ tsp lemon peel, grated
  • 1 Tbsp lemon juice
  • ¼ tsp salt

Directions

  1. Preheat oven to 350°.
  2. Lightly oil 13 x 9 baking dish.
  3. Bake chicken breasts in pan with 1/3 cup of water for 20 to 30 minutes or until chicken is thoroughly cooked.
    Let chicken cool and then shred.
  4. In saucepan, heat Alfredo sauce and capers on low until warm, stirring occasionally.
  5. Grate lemon. Add juice from lemon to zest.
  6. In a medium bowl, mix ricotta cheese, mozzarella, lemon zest, lemon juice, and salt.
  7. Lightly oil 13 x 9 baking dish.
  8. Spoon 1/4 of Alfredo sauce into dish.
  9. Top with first layer of 3 noodles.
    1. Spread half of the cheese and lemon mixture over noodles.
    2. Sprinkle with ¼ cup of Parmesan cheese.
    3. Add half of the cooked chicken.
    4. Spoon ¼ of the Alfredo sauce on top.
  10. Top with second layer of noodles.
    1. Spread half of the cheese and lemon mixture over noodles.
    2. Sprinkle with ¼ cup of Parmesan cheese.
    3. Add half of the cooked chicken.
    4. Spoon ¼ of the Alfredo sauce on top
  11. Top with third layer of noodles.
    1. Spoon ¼ of the Alfredo sauce on top.
    2. Sprinkle with ¼ cup of Parmesan cheese and ½ cup of mozzarella cheese.
  12. Cover with foil and bake at 350° for 40 minutes. Let stand covered for 15 minutes.

I have never been much of a lasagna person but this recipe with white Alfredo sauce is to die for. If you love the taste of lemon, don’t be shy about adding extra lemon juice.

You can make the chicken ahead of time, shred, and then reheat before combining the ingredients for baking.

This dish freezes well. Just cut up the lasagna and freeze as individual servings for easy thawing.
